Ingredients

  • 500g chicken thigh, cubed
  • 1 bunch Chinese broccoli
  • 1 red capsicum, sliced
  • 1 brown onion, sliced
  • 1 clove garlic, crushed
  • 1.5 tbsp. oyster sauce
  • 1.5 tbsp. dark soy sauce
  • 2 tsp fish sauce
  • 1 tbsp. sweetener
  • 1 tbsp. lime juice
  • 1 shallot
  • 1/3 cup cashew nuts
  • 140g raw basmati rice

Instructions

  1. Cook the rice according to instructions.
  2. Heat a wok or large frypan over high heat.
  3. Add in the onion and allow to soften. Add in the chicken thighs and cook until browned. Add in the Chinese broccoli, capsicum and the sauce and turn down to a simmer.
  4. Simmer for 5-10 minutes or until the chicken has cooked through and sauce has thickened.
  5. Stir through the cashew nuts and shallot.
  6. Serve with the rice.
