600g spud lite or carisma potatoes, sliced into rounds
1 brown onion, sliced
100g light smooth Ricotta
½ cup Coconut or almond milk
1 tsp dried herbs
1 clove garlic, crushed
himalayan pink salt and black pepper
Instructions
Preheat oven to 200 degrees C.
In a baking tray, layer the potatoes then onion, then some sauce, repeat until all the potato has been used. Tip remaining sauce over the top. Top with the cheese.
Oven bake 45-55 minutes or until the potatoes feel soft when stabbed with a knife.
